About the Role
We are seeking an experienced Menu Development Chef to join a high-volume catering operation. This role is responsible for designing innovative menus, maintaining exceptional food quality standards, and providing culinary leadership across the kitchen team. The successful candidate will work closely with operations, procurement, and production teams to ensure meals meet customer expectations, nutritional requirements, and operational efficiency standards.
 
Key Responsibilities
  • Design and develop menus in collaboration with customers and operational teams
  • Ensure menu presentations, specifications, and recipes meet company and client standards
  • Monitor food quality, safety, and compliance across kitchen operations
  • Develop recipes, portion specifications, and production methods
  • Analyse menu performance, costs, and production efficiency
  • Train and mentor chefs, cooks, and kitchen staff to maintain high productivity and quality
  • Support operational improvements and implement process changes where required
  • Ensure compliance with food safety regulations and workplace safety standards
  • Prepare reports on food production, menu performance, and customer trends
About You
  • Formal qualification in Culinary Arts or a related field (Diploma, Associate, or Bachelor level preferred)
  • 7-10 years' experience as a Chef in a high-volume kitchen environment
  • 2-5 years' experience in a Sous Chef or senior culinary role
  • Experience in menu design and large-scale food production
  • Strong leadership and team development skills
  • Excellent organisational and time-management abilities
  • Ability to work in a fast-paced, deadline-driven environment
  • Knowledge of dietary requirements, allergens, nutritional standards, and religious dietary needs
  • Strong communication and problem-solving skills
Desirable
  • Experience in in-flight catering or large-scale catering operations
  • Knowledge of food production systems and menu costing
  • Proficiency in Microsoft Office
